Almond Pancake Recipe

February 18, 2010 Written by JP

I always try to find new and inventive ways to improve the health of those I love. I keep this objective in mind whenever I scour the medical journals or surf the information superhighway. But, in all honesty, I have an even more specific agenda - to discover delicious, pleasurable and/or simple ways of promoting wellness in my family and friends. I simply despise having to tell them that they need to make difficult changes in order to achieve better health. Sometimes this an unavoidable fact of life. However, if there is any way for me to offer a kinder, gentler alternative that’s precisely what I’ll do. Read more »

Healthy Chipotle Taco Recipe

January 20, 2010 Written by JP

A recurrent theme in the Healthy Fellow household is a lively debate about whether people are capable of real change. Can a long time liar one day decide to walk the path of truth? Is a habitual criminal at the age of 17 destined to break laws throughout the entirety of his life? Similar questions can be applied to health issues as well. Will chain smokers ever stop their self-destructive habit? How about “rageoholics” or morbidly obese individuals? My general position is that profound change is available to us all. It certainly doesn’t always happen and there are probably countless reasons why. But every morning when I look in the mirror, I see the reflection of someone who’s radically different than he was a year ago. When I look at my wife, I see a beautiful woman who has transformed her life in the past and continues to do so by addressing her own set of challenges. These are but a few of the reasons why I’m convinced that change is indeed possible and that hope is not wasted on believing so. Read more »

Peanut Butter and Jelly Cookies

January 7, 2010 Written by JP

In everyone’s life there are specific images that we associate with childhood. It might be a photograph taken on a family vacation or the memory of a swing set that used to reside in the backyard of your first home. Iconic foods can also take us back in time to our youth. More often than not, these foods consist of confections that we’ve mostly given up as we’ve grown older and more health conscious. One of the most memorable treats from my early years is the classic peanut butter and jelly sandwich. It’s been a long time since I’ve had one because I no longer eat bread and sugar sweetened jelly. But Mrs.Healthy Fellow recently came up with a creative solution that could once again reunite me with my childhood buddy, PB&J. Read more »

Thursday is the day of the week that I venture out to my local health food store. Today’s mission: To find a crunchy snack that’s all-natural, nutritious and delicious. It’s a tall order, but I think I’ve come up with three noteworthy items that fit the bill. There’s a little something for everyone: raw foodists, vegetarians and those of us on low-carb diets. I’m even throwing in a recipe from my own kitchen that is far more versatile and easy to prepare than any other chip or cracker I’ve ever made. Please join me on this brief tour to the land of healthy snacking. Read more »

Rosemary and Thyme for Brain Health

June 8, 2009 Written by JP

The next time you grill some rosemary chicken or make a pot of Boston clam chowder with thyme, keep in mind that these fragrant herbs may be doing a lot more for your health than simply stimulating your taste buds. Recent scientific research is providing evidence that Rosmarinus officinalis and Thymus vulgaris may in fact shield us from some of the common ills that affect both the body and mind. In conducting today’s research, I was pleasantly surprised to find that these unassuming and ubiquitous herbs show a great potential impact on brain health and function.

Let’s say you’re hosting a party and a few of your guests have special nutritional needs. Maybe they’re diabetic or trying to avoid refined carbohydrates and sugar. Yesterday, a friend of mine commented on how his new diet was derailed by some unexpected circumstances. He went on to describe a number of stressful events that made it difficult for him to acquire healthy food. Well, that’s his story and he’s sticking to it. So this would be a good opportunity for me to share some simple tips that have kept me on the right track to good health. Read more »
