Natural Products Expo West 2014 Part One

What does it feel like to be surrounded by 67,000 members of the natural health community? On most days, I couldn’t possibly tell you. But, a little over a week ago, that’s exactly where I found myself – at the Natural Products Expo West in Anaheim, California. It’s quite an experience! There were over 2,600 exhibitors and dozens of educational presentations. Thankfully, I brought along my most comfortable walking shoes (Sanuks), a big appetite for all of the sampling and, most importantly, Team Healthy Fellow!

Cashew Milk Recipe

Homemade cashew milk is a valuable resource for anyone who’s interested in improving hydration, nutrient density and/or promoting weight gain. The first two objectives are fairly commonplace. Many people admit that they don’t drink enough water or eat enough whole foods. The issue of healthful weight gain isn’t as prevalent a concern. However, it does apply to a significant portion of the population for various reasons ranging from weight loss associated with disease states to eating disorders.

Creamy Asparagus Soup Recipe

Cream of asparagus soup is one of my favorite cool weather comfort foods. However, I make it in a slightly different way than most. You can’t tell by its appearance and maybe even the taste, but my version of this delicacy is completely dairy free. You might guess that I replace the cream or whole milk with soy milk. Wrong. Instead, I use the taste and texture of raw cashews to mimic the richness of cream while, at the same time, improving the overall nutritional composition of the end product.
